Curried Sesame Veggies & Pasta
- 6 ounces, weight Pasta Of Your Choice
- 1 teaspoon Curry Powder
- 1 teaspoon Smoked Paprika
- 1/2 teaspoons Turmeric
- 1/2 teaspoons Ground Ginger
- 1/4 teaspoons Cinnamon
- 2 teaspoons Olive Oil
- 1/2 cups Red Onion, Sliced
- 1 clove Garlic, Minced
- Salt And Pepper
- 1 cup Zucchini, Cut Into Half Moons
- 1/2 whole Bell Pepper, Diced
- 1 teaspoon Sesame Oil
- 1 whole Tomato, Sliced
- 1/4 cups Peanuts
- 1 teaspoon Sesame Seeds
- Cook pasta according to package directions.
- Mix the curry powder, paprika, turmeric, ground ginger and cinnamon together until blended.
- Set aside.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- Add onions and garlic, season with salt and pepper, and saute until they begin to soften.
- Add the zucchini and peppers, along with the sesame oil and curry powder mix.
- Stir well.
- Cook over medium heat until the vegetables are tender.
- Add the tomato, peanuts and sesame seeds.
- Serve the vegetable mixture over the pasta and garnish with additional peanuts if desired.
- Notes: You can use any mix of veggies that you would like with this dish.
- It can also be served as a side dish, just leave out the pasta.
