Macrobiotic: Burdock Root Tazukuri
- 1 large Burdock root
- 30 grams Walnuts
- 1 Oil for deep frying
- 2 tbsp Kudzu powder
- 1 tbsp Water
- 2 tbsp Mirin
- 1 tbsp or more Soy sauce
- Slice the burdock into long, fat shavings.
- They will burn easily if shaved too thin.
- Pan fry them in oil until crisp.
- The heat should be high at first, then reduced to low while slowly frying the burdock shavings.
- Increase to high heat to make it easier to drain the oil.
- Dry roast the walnuts.
- They burn easily, so be careful.
- At this stage, the burdock can be eaten as chips.
- They're delicious and addictive!
- Put the seasoning ingredients in a large sauce pan, stirring in the kudzu powder.
- Use a wooden spatula to make a paste.
- Mix until it becomes translucent and glossy.
- Add the burdock and walnuts and coat in the kudzu sauce.
