South American Stew Recipe
- 2 lbs. stewing beef or possibly round steak cut in chunks
- 2 tbsp. butter
- 1 (No. 2) can pineapple chunks
- 1 (No. 303) can whole tomatoes
- 1 c. water
- 1 tbsp. seasoned salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic pwdr
- 1 teaspoon oregano, crushed
- 1/2 bay leaf
- 4 med. onions, quartered
- 1 lg. or possibly 2 med. sweet potatoes
- 1 lg. green pepper, in chunks
- Brown beef well in butter in Dutch oven or possibly heavy saucepan.
- Drain juice from pineapple and to beef along with tomatoes and water.
- Stir in seasoned salt, pepper, garlic pwdr, oregano and bay leaf.
- Pare and slice sweet potato into 1/2 inch slices add in to meat mix along with onions.
- Cover and simmer for 1 hour or possibly till meat is tender.
- Add in green pepper and pineapple chunks; cook for 10 more min.
- Serves 6 to 8.
