Game Day Chicken Skewers

  1. 1.
  2. Place the wooden skewers in a shallow dish and cover with water.
  3. Allow them to sit while preparing the remaining ingredients.
  4. 2.
  5. Lay the chicken thighs on a large cutting board.
  6. Unroll each thigh and slice lengthwise to make 3 strips.
  7. 3.
  8. In a separate bowl, combine the soy sauce, garlic, lime juice, ginger and brown sugar.
  9. Stir well.
  10. 4.
  11. Carefully thread a strip of chicken onto each soaked skewer and place in a shallow dish.
  12. Cover the chicken with the marinade.
  13. Put dish into the refrigerator.
  14. Allow chicken to marinate for at least 3 hours or up to overnight.
  15. 5.
  16. When ready to cook, place the skewers on a grill pan or hot grill over medium heat, making sure to completely coat the chicken in the marinade as it is transferred from the marinade pan.
  17. Turn frequently to prevent burning of the sugars.
  18. Cook for 10 minutes, or until cooked throughout and deeply browned.
  19. 6.
  20. Remove from the heat and enjoy.
  21. Note: I wrote this recipe for easy transport to the tailgating site.
  22. The skewers do get a little sticky from the marinade.
  23. If you are cooking these at home, I would marinate the strips in a bowl (not on the skewers) and then place chicken on the skewers right before cooking.
