Refreshing mexican shrimp cocktail
- 16 large Cooked, peeled, deveined shrimp
- 1 small Onion diced
- 1 medium Cucumber peeled and cubed
- 1/2 cup Cilantro, chopped lightly
- 1 medium Lime juice
- 1 Jalapeno diced (optional)
- 16 oz Tomato or Clamato juice
- 1 pinch salt
- 1 medium Avacado diced
- In large chilled glass or glass bowl add 8 shrimp each, cucumber, onion, peppers, cilantro, salt and lime juice.
- Pour tomato or clamato juice over and top with avacado, if preferred you can chill or eat right away.
