Sweet Potato Surprise Pancakes
- 1 12 cups all-purpose flour
- 6 tablespoons brown sugar (packed)
- 12 teaspoon baking soda
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 12 teaspoon cinnamon
- 3 eggs
- 2 cups buttermilk
- 34 cup sweet potato, cooked and mashed (canned or fresh)
- 4 tablespoons butter, melted
- 1 teaspoon vanilla
- 2 cups mini marshmallows
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together eggs, buttermilk, sweet potatoes, butter, and vanilla.
- Pour liquid ingredients into flour mixture and whisk until just combined, a few lumps are OK.
- Lightly coat a griddle or nonstick skillet with oil.
- Heat to medium-high heat and spoon 1/4 cup batter for each pancake.
- Sprinkle a few marshmallow onto each spoonful of batter.
- Cook until bubbles form on top and batter is set-about 4 minutes.
- Using a thin, flexible spatula, flip pancakes and cook until golden brown, 2-3 minutes more.
- Serve with warm maple syrup and extra marshmallows if desired.
