Light Strawberry Cheesecake Bars

  1. Line an 8-inch square cake pan with foil.
  2. In food processor, process graham crackers and sugar to fine crumbs.
  3. Add butter and 1 T water; process until crumbs are moistened.
  4. Press crumb mixture into pan.
  5. Melt 3/4 cup strawberry preserves; spread over crumbs.
  6. On medium-high speed, beat pudding mix, milk and vanilla 1 minute.
  7. Beat in cream cheese until smooth; fold in topping.
  8. Spread over preserves.
  9. Chill until firm, 8 hours or overnight.
  10. Cut into 12 slices.
  11. Melt remaining preserves.
  12. Top each slice with a halved strawberry and 1 t preserves.
