Simple Roast Veggies
- 2 potatoes
- 1 red pepper
- 1 yellow pepper
- 6 mushrooms
- 12 onion
- 1 zucchini
- 1 teaspoon olive oil
- 2 teaspoons balsamic vinegar
- 2 minced garlic cloves
- Preheat oven to 375 degrees.
- Chop up potatoes.
- Put in microwave for 2 minutes while chopping rest of veggies.
- Place all veggies in bowl.
- Add oil, vinegar and garlic, and toss to coat.
- Spread out in roasting pan and cook for about an hour.
