Simple Roast Veggies

  1. Preheat oven to 375 degrees.
  2. Chop up potatoes.
  3. Put in microwave for 2 minutes while chopping rest of veggies.
  4. Place all veggies in bowl.
  5. Add oil, vinegar and garlic, and toss to coat.
  6. Spread out in roasting pan and cook for about an hour.
