Uncle Bill's Chicken Strips
- 2 pounds chicken breast halves, boneless, skinless
- 2 large eggs
- 13 cup buttermilk
- 123 cups bread crumbs dried
- 1/2 cup parmesan, parmigiano-reggiano cheese, grated
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons dill weed, dried
- 1 x salt and black pepper to taste
- 2 tablespoons butter melted
- 2 tablespoons olive oil
- Preheat oven to 400F (200C).
- Remove all the fat from chicken breasts and cut into 1-inch by 4-inch strips.
- In a bowl, whisk together the eggs and buttermilk.
- In a zip-lock bag, mix together the bread crumbs, cheese, garlic and onion powder, dill weed, salt, and black pepper.
- Dip each chicken strips into the buttermilk mixture, then into the bread crumb mixture (about 4 strips at a time), and toss until well coated.
- Place the strips in a single layer in a 9x13 inch baking dish and drizzle with melted butter and olive oil.
- Bake until golden brown 15 to 18 minutes, turning once half way through the baking.
- Cool for a few minutes and serve warm.
