Uncle Bill's Chicken Strips

  1. Preheat oven to 400F (200C).
  2. Remove all the fat from chicken breasts and cut into 1-inch by 4-inch strips.
  3. In a bowl, whisk together the eggs and buttermilk.
  4. In a zip-lock bag, mix together the bread crumbs, cheese, garlic and onion powder, dill weed, salt, and black pepper.
  5. Dip each chicken strips into the buttermilk mixture, then into the bread crumb mixture (about 4 strips at a time), and toss until well coated.
  6. Place the strips in a single layer in a 9x13 inch baking dish and drizzle with melted butter and olive oil.
  7. Bake until golden brown 15 to 18 minutes, turning once half way through the baking.
  8. Cool for a few minutes and serve warm.
