Chicken Ramen Soup
- 3 cups water
- 1 (3 ounce) package ramen noodles, chicken flavored
- 2 cups chicken meat, cooked and chopped, white meat preferred
- 2 leaves bok choy, sliced into thin strips
- 1 carrot, thinly sliced
- 1 teaspoon sesame oil
- Bring water to a boil in a large saucepan.
- Break up noodles and stir into pot along with chicken, bok choy, and carrot.
- Bring back to a boil; reduce heat and simmer 3 minutes or until vegetables are tender.
- Stir in contents of seasoning packet and sesame oil and serve.
- NOTE: Sometimes I leave out the seasoning packet and stir in a generous serving of chicken bouillon granules.
