Rigatoni With Shrimp And Feta Cheese(Serves 8)
- 1/2 c. finely chopped onion
- 1 garlic clove, minced
- 6 Tbsp. olive oil
- 1/2 c. dry white wine
- 3 (14 to 16 oz.) cans plum tomatoes and juice, chopped coarsely
- 2 Tbsp. chopped fresh parsley
- 1/2 tsp. dried basil, crumbled
- 1/2 tsp. dried oregano, crumbled
- 3/4 tsp. salt
- 1 1/2 lb. medium shrimp, shelled and deveined
- 1 lb. rigatoni
- 1/2 lb. Feta cheese
- In a kettle, cook onion and garlic in oil over medium heat until softened.
- Add wine and boil mixture for 1 minute.
- Stir in tomatoes with juice, 1 tablespoon parsley, basil, oregano and salt.
- Simmer mixture 10 minutes, stirring occasionally, until reduced and thickened somewhat.
- Add shrimp and cook for 4 to 5 minutes or until shrimp are just firm.
