Great Grandmother Marshall's Cabbage Rolls
- 1 head cabbage
- 1 lb ground beef
- 12 lb ground sausage
- 1 cup cooked rice
- 1 teaspoon salt (to taste)
- 1 teaspoon pepper (to taste)
- 1 cup celery, diced
- 1 cup onion, diced
- 1 quart tomatoes (diced?)
- Preheat oven to 300.
- Cook rice according to directions.
- Saute celery and onion in salt & pepper.
- Brown beef and sausage.
- Mix beef, sausage, onions, celery, rice, salt & pepper in a large bowl.
- Separate cabbage leaves, keeping them whole.
- Blanch leaves 5 minutes in boiling water.
- Remove leaves from water.
- Roll mix in cabbage and fasten with a toothpick.
- Place in covered pan or casserole.
- Pour tomatoes over rolls.
- Cook slowly for about an hour or until done.
