Angel Food Tiramisu

  1. Line 2 full-size hotel pans with plastic wrap; set aside.
  2. (Or, use 1 half-size hotel pan for trial recipe.)
  3. Brew coffee with water; cool.
  4. Stir in 3 Tbsp.
  5. plus 1 tsp.
  6. chocolate extract (or stir in 2 tsp.
  7. extract for trial recipe).
  8. Beat cream cheese, marscapone cheese, brown sugar and remaining extract with mixer until light and fluffy.
  9. Split cakes in half horizontally.
  10. Arrange 1/2 of the cake pieces in single layer in prepared hotel pans; drizzle with 1/2 of the coffee mixture.
  11. Cover with 1/2 of the cream cheese mixture.
  12. Sift 1/2 of the cocoa powder evenly over cream cheese mixture in pan.
  13. Repeat all layers.
  14. Refrigerate 2 hours or until chilled.
  15. Cut dessert in each pan into 20 squares to serve.
  16. (Or, cut dessert for trial recipe into 8 squares.)
