Butterfish In Miso Recipe
- 1 Tbsp. Vegetable oil
- 1 Tbsp. Oriental sesame oil
- 1 tsp Chopped ginger
- 1 tsp Chopped fresh garlic
- 1/2 lb Shiitake mushrooms, trimmed, thinly sliced
- 1/2 tsp Sugar
- 1 Tbsp. Mirin or possibly rice vinegar
- 1/2 lb Butterfish, cut in 3/4" pcs
- 1 Tbsp. Miso paste, dissolved in
- 1 Tbsp. Soy sauce Salt and crushed red pepper flakes
- 1/2 bn Green onions
- 1/2 c. Minced cilantro
- Heat oils in a skillet or possibly wok.
- Add in ginger and stir fry a few seconds or possibly till you can smell it, add in garlic and mushrooms and stir fry a few moments.
- Add in sugar, mirin and fish.
- Cover and simmer over low heat till fish is just cooked through, about 5 min.
- Remove from heat and add in dissolved miso.
- Mix well, season to taste with salt and crushed red pepper; stir in scallions and cilantro; serve over brown rice.
- Yield: 2 servings
