mini french bread loaves
- 1 1/2 cup warm water
- 2 tsp sweetner (sugar,honey,agave)
- 3 1/2 cup flour
- 1 1/2 tsp active dry yeast
- 1 tsp salt
- 1 Mix yeast and sucanat in large bowl and stir in water until dissolved.
- (If you're using honey or agave, I put it in the water then stir in the yeast).
- 2 Add salt then flour and mix until a soft, pliable dough forms, not too sticky.
- 3 Place on floured surface and knead for 6-8 minutes.
- 4 Place back in the bowl and cover with a kitchen towel.
- 5 Let rise for one hour or until doubled in size (I make this in my mixer so I just set it and leave it be for about 4-5 minutes and cover it) divide in half, roll each half into a rectangle then roll lengthwise to make a log shape, pinching the ends place on a pizza stone (or cookie sheets but pizza stone works best) and let rise for an additional 30 minutes.
- cut slits into your loaves (about four) and brush an egg wash over it.
- Bake at 375 for 20-25 minutes or until golden brown.
