mini french bread loaves

  1. 1 Mix yeast and sucanat in large bowl and stir in water until dissolved.
  2. (If you're using honey or agave, I put it in the water then stir in the yeast).
  3. 2 Add salt then flour and mix until a soft, pliable dough forms, not too sticky.
  4. 3 Place on floured surface and knead for 6-8 minutes.
  5. 4 Place back in the bowl and cover with a kitchen towel.
  6. 5 Let rise for one hour or until doubled in size (I make this in my mixer so I just set it and leave it be for about 4-5 minutes and cover it) divide in half, roll each half into a rectangle then roll lengthwise to make a log shape, pinching the ends place on a pizza stone (or cookie sheets but pizza stone works best) and let rise for an additional 30 minutes.
  7. cut slits into your loaves (about four) and brush an egg wash over it.
  8. Bake at 375 for 20-25 minutes or until golden brown.
