Brown Sugar Muffins
- 13 cup butter, softened
- 12 cup brown sugar, packed
- 2 eggs
- 1 cup wheat flakes cereal
- 12 cup milk
- 1 teaspoon vanilla extract
- 1 14 cups flour
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- Preheat oven to 400F
- Line muffin cups with paper cupcake liners or spray with cooking spray.
- Cream together butter and brown sugar; add eggs, one at a time, beating well after each addition.
- Stir in cereal.
- Combine milk and vanilla in a small dish.
- Combine flour, baking powder and salt in another bowl; add to the creamed mixture alternately with milk mixture, beating just until moistened.
- Fill muffin cups 2/3 full.
- Bake for 13-15 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pan to finish cooling on a wire rack.
