Lebanese Green Beans

  1. Heat oil in large pan and add onions.
  2. Add salt/pepper.
  3. Over medium heat, stir until onions become translucent.
  4. Add chopped green beans, mix and cover for about 5 min.
  5. on low heat.
  6. When green beans are tender (change in color also), add chopped tomatoes.
  7. Mix and cover for another 5 min.
  8. Add tomato paste and sugar.
  9. At this point if the tomatoes have not released enough liquid, you can add 3 tbs.
  10. There should not be too much liquid.
  11. Cover and simmer for a final 2 min.
  12. Green beans should be tender, tomatoes should be saucy.
  13. Enjoy at room temp.
  14. or cold.
  15. Tastes even better the second day.
  16. Serve with pita bread.
