Zucchini and eggplant fries
- 1 zucchini
- 2 eggplant
- 2 eggs
- 1/2 tbsp chilli flakes
- 1/2 tsp black pepper
- 1 parsley (for garnish)
- Chop the zucchini and eggplant into thin slices.
- Beat the eggs, add salt, chili flakes, black pepper for seasoning and mix well.
- Drop the eggplants and zucchini into the bowl.
- In a pan heat oil (medium heat) and drop the vegetables, fry both sides till golden brown.
- Place it on a paper towel to drain the excess oil, garnish with parsley and add more salt if needed.
- Enjoy!
