Zucchini and eggplant fries

  1. Chop the zucchini and eggplant into thin slices.
  2. Beat the eggs, add salt, chili flakes, black pepper for seasoning and mix well.
  3. Drop the eggplants and zucchini into the bowl.
  4. In a pan heat oil (medium heat) and drop the vegetables, fry both sides till golden brown.
  5. Place it on a paper towel to drain the excess oil, garnish with parsley and add more salt if needed.
  6. Enjoy!
