AMIEs COCONUT Bread
- 180 grams baking flour
- 180 grams sugar
- 200 grams coconut, grated
- 60 grams butter
- 15 grams baking powder
- 150 ml warm fresh milk
- 1 egg
- 1 grated rind of 1 lemon
- 1 icing sugar
- Sift dry ingredients together.
- Cream butter, adding sugar gradually, creaming well.
- Add unbeaten egg.
- Combine warm milk and grated rind of lemon.
- Add alternately with the dry ingredients to creamed mixture.
- Blend well after each addition.
- Fold in grated coconut, mixing thoroughly until well blended.
- Pour into a loaf tin, well greased.
- Bake at 180AC for 45 minutes.
- Cool.
- Cover with icing sugar, if desired.
- Serve, share and enjoy.
