Japanese Leek and Ginger Soup

  1. Mince the white part of the leek, and cut the green part into round slices.
  2. Grate one of the ginger, and mince the other one.
  3. Cut the pork into very thin strips.
  4. Heat oil in a pot, and stir-fry the pork.
  5. When it starts to cook through, add the minced leek and ginger, and continue stir-frying.
  6. When fragrant, add the water and flavouring ingredients, and scoop in the tofu with a spoon.
  7. Simmer for about 15 minutes, add the grated ginger and round slices of leek, then it's done!
