Daddy R's Chocolate Chip Pancakes

  1. Pre-heat griddle (350 degrees) or pan on medium heat.
  2. Combine flour, cinnamon, ginger, baking powder, salt, sugar and mix well.
  3. Beat egg yolks with vanilla and mix with milk and margarine.
  4. Whip egg whites until stiff peaks form.
  5. Combine dry ingredients with milk mixture.
  6. Fold in egg whites.
  7. Fold in 1/2 cup of chocolate chips.
  8. After spooning batter into fry pan/griddle, add spoonfulls of the remaining chips.
  9. Flip when tops begin to bubble.
  10. (Flip only once to keep fluffy).
  11. Enjoy with your favorite syrup.
