Shad in Mustard Crumbs

  1. Brush shad filets with 3 tablespoons of the mustard.
  2. Dredge in bread crumbs, then dab remaining 3 tablespoons mustard over the breading.
  3. Dredge again in the bread crumbs.
  4. It's okay if the surface looks crumbly.
  5. Saute fish in olive oil until it flakes easily, about 4 minutes per side.
  6. Serve with lemon wedges.
