Migas
- 1-1/2 oz.
- 1 tsp. choppedchopped onion
- 1/2 jalapeno pepper, seeded, minced
- 1/2 plum tomato, chopped
- 1 corn tortilla, cut into strips
- 1/2 cup cholesterol-free egg product
- 1/4 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses
- Cook chorizo in skillet on medium heat until lightly browned; drain well to remove excess oil.
- Add onion and pepper; cook 2 minutes.
- Stir in tomatoes; cook 2 minutes.
- Add tortillas and eggs to skillet.
- Cook until eggs are almost set; stirring occasionally.
- Sprinkle with cheese; cover.
- Cook 1 to 2 minutes or until cheese is melted.
