Migas

  1. Cook chorizo in skillet on medium heat until lightly browned; drain well to remove excess oil.
  2. Add onion and pepper; cook 2 minutes.
  3. Stir in tomatoes; cook 2 minutes.
  4. Add tortillas and eggs to skillet.
  5. Cook until eggs are almost set; stirring occasionally.
  6. Sprinkle with cheese; cover.
  7. Cook 1 to 2 minutes or until cheese is melted.
