Vegetable and Asiago Pasta
- 3 cups cherry tomatoes or 3 cups grape tomatoes
- 14 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 6 cups Baby Spinach (approximately 1 bag)
- 1 (450 g) package spaghettini
- 12 cup asiago cheese, shredded
- 14 cup fresh basil or 14 cup parsley, chopped
- toasted pine nuts (optional)
- Preheat oven to 400F Toss tomatoes with balsamic vinegar, oilve oil, garlic, salt and pepper.
- Spread tomatoes on foil-lined baking sheet, and roast for 20-30 minutes or until shriveled and lightly browned.
- Scrape tomatoes and juices into a large bowl.
- Add spinach.
- Meanwhile, prepare pasta according ot package directions.
- Toss the pasta with spinach, roasted tomatoes, Asiago and basil.
- Sprinkle with toasted nuts if using.
- Serve with additional cheese on the side .
