Fruit Cake
- 7 cup pecans
- 3 1/2 cup all mixed fruit
- 1 lb golden raisins
- 4 cup all purpose flour
- 1 1/2 tsp salt
- 1/2 tsp baking powder
- 1 corn syrup or honey
- 1 1/2 tsp cinnamon
- 1 tsp nutmeg
- 1 cup butter
- 2 1/4 cup sugar
- 6 unbeaten eggs
- 1 oz brandy or rum flavoring
- 1 OR
- 1 3/4 cup chopped pineapples OR
- 3/4 lb chopped pineapples
- 1 OR
- 1 3/4 cup whole cherries OR
- 3/4 lb whole cherries
- Sift together flour, baking powder, salt, cinnamon,nutmeg.
- Add nuts, fruit and raisins.
- Mix together until all fruits and nuts are coated in roasting pan.
- Set aside.
- Cream butter and sugar until fluffy.
- Add eggs one at a time, beating well after each.
- Add flavoring,add to fruit mixture and mix well with hand.
- Preheat oven 275 for 3 hrs
- 30 minutes later, brush with honey or syrup.
- Add nuts on top.
