Beans With Black Olives Recipe

  1. Wash and trim the beans.
  2. Peel and quarter the shallots.
  3. Cut the lemon into wedges.
  4. Heat the oil in a saucepan and saute/fry the shallots over a low heat till translucent/soft.
  5. Add in the beans and lemon wedges, toss, and saute/fry briefly with the other ingredients.
  6. Add in the salt, pepper, bay leaf, thyme, and wine.
  7. Cover and cook over a medium heat till the beans are tender, but still hard to the bite.
  8. Halve and pit the olives, add in to the beans, and heat briefly.
  9. Sprinkle the beans with the minced parsley and savory and serve immediately.
  10. This recipe yields 4 servings.
