Beans With Black Olives Recipe
- 1 3/4 lb green beans
- 6 x shallots
- 1 x lemon
- 2 Tbsp. extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 1 x bay leaf
- 2 x thyme sprigs
- 1/2 c. white wine
- 1/3 c. black olives
- 1 Tbsp. finely-minced parsley
- 1 tsp finely-minced savory
- Wash and trim the beans.
- Peel and quarter the shallots.
- Cut the lemon into wedges.
- Heat the oil in a saucepan and saute/fry the shallots over a low heat till translucent/soft.
- Add in the beans and lemon wedges, toss, and saute/fry briefly with the other ingredients.
- Add in the salt, pepper, bay leaf, thyme, and wine.
- Cover and cook over a medium heat till the beans are tender, but still hard to the bite.
- Halve and pit the olives, add in to the beans, and heat briefly.
- Sprinkle the beans with the minced parsley and savory and serve immediately.
- This recipe yields 4 servings.
