Delaware Cream Cheese-Pineapple Pie

  1. Combine sugar, cornstarch and pineapple plus juice.
  2. Cook over medium heat, stirring constantly until mixture is think and clear.
  3. Cool; set aside.
  4. Blend cream cheese, sugar and salt in a mixer bowl.
  5. Add 2 eggs, one at a time, beating after each addition.
  6. Blend in milk and vanilla.
  7. Spread cooled pineapple layer over bottom of pie shell.
  8. Pour cream cheese mixture over pineapple; sprinkle with pecans.
  9. Bake at 400F (200C).
  10. for 50 minutes.
