Chicken and Zucchini Pilaf

  1. Combine broth and water in saucepan.
  2. Cook rice in broth-water combination according to package directions.
  3. Set aside.
  4. In nonstick skillet, saute celery, onion and zucchini in olive oil until tender.
  5. Add cooked chicken and rice and heat through.
  6. Sprinkle with poultry seasoning and mix well.
