Barbeque Roasted Salmon Recipe
- 1/3 c. pineapple juice
- 1/4 c. fresh lemon juice
- 4 x 6 salmon fillets
- 1/4 c. brown sugar
- 1 Tbsp. chili pwdr
- 1 Tbsp. lemon zest
- 1 tsp grnd cumin
- 1/2 tsp grnd cinnamon
- 1/2 tsp salt
- Combine pineapple juice, lemon juice and salmon fillets in a bag and seal.
- Marinate in the refrigerator for an hour.
- Remove salmon and throw away juices.
- Combine next 6 ingredients and mix well.
- Rub mix on each fillet.
- Place fillets in a baking dish coated with cooking spray.
- Bake at 400 degrees for 12 - 15 min till fish is flaky.
- Serve with fresh lemon slices.
- Note: Slimmers -: You can use your favorite sugar substitute but the sugar really isn't which big of a problem in this recipe because it is just part of the rub.
