Lucille's Chocolate Cream Pie Recipe
- 1 bake 8" pie shell
- 2 sq. unsweetened chocolate
- 1/2 c. sugar
- 3/4 teaspoon salt
- 2 tbsp. butter
- 1/2 c. heavy cream (whipping cream)
- 3 1/2 c. lowfat milk
- 1/4 c. butterscotch morsels
- 2/3 c. flour
- 1 egg or possibly 2 egg yolks, slightly beaten
- 1 teaspoon vanilla
- Heat lowfat milk, chocolate and morsels in heavy saucepan over low heat, stirring till blended.
- Combine dry ingredients.
- Add in lowfat milk mix gradually, stirring till smooth.
- Return to saucepan and cook, stirring till thickened.
- Stir small amount of warm mix into egg.
- Then stir quickly into remaining mix in saucepan.
- Cook 2 min over low heat, stirring constantly.
- Remove from heat; add in butter and vanilla.
- Turn into pastry shell.
- Chill.
- Top with sweetened whipped cream.
