Ginger Chicken with Orange Sauce

  1. Mix frozen OJ, soy sauce, ginger, and jalapeno.
  2. Set aside
  3. Lightly dust chicken with cornstarch, salt and pepper.
  4. Brown chicken in oil until cooked through, set chicken on paper towel to drain.
  5. Add the sauce mixed in step 1 to the hot pan, cook until bubbly over medium heat.
  6. Return chicken to the pan and add sugar snap peas
  7. Stir, reduce heat, simmer ~5-10 min or until peas are cooked to desired texture.
  8. If desired you can thicken sauce by crumbling gingersnap cookies in, be sure to stir well.
