Pita: Vegetable & Peanut Pita
- 4 ounce plain, lowfat yogurt
- 1/2 cup KRAFT Fat Free Ranch Dressing
- 1 cucumber
- 1/2 red onion
- 2 carrot
- 12 radishes
- 2 medium green pepper
- 80 piece/slice PLANTERS Dry Roasted Peanuts
- 4 whole wheat pita bread rounds, cut in half
- 32 ounce fat-free milk
- 8 SNACKWELL'S Sugar Free Shortbread Cookies
- Mix yogurt (4 ounces = 1/2 cup) and dressing in small bowl until well blended.
- Slice cucumber thinly; slice onion thinly; peel and shred carrots; slice radishes thinly; slice green pepper.
- Toss all vegetables in large bowl.
- Add yogurt mixture; mix lightly.
- Stir in peanuts.
- Cut pitas in half and fill halves with vegetable mixture.
- Serve each person an 8-ounce (1 cup) glass of milk along with 2 cookies.
