Pita: Vegetable & Peanut Pita

  1. Mix yogurt (4 ounces = 1/2 cup) and dressing in small bowl until well blended.
  2. Slice cucumber thinly; slice onion thinly; peel and shred carrots; slice radishes thinly; slice green pepper.
  3. Toss all vegetables in large bowl.
  4. Add yogurt mixture; mix lightly.
  5. Stir in peanuts.
  6. Cut pitas in half and fill halves with vegetable mixture.
  7. Serve each person an 8-ounce (1 cup) glass of milk along with 2 cookies.
