R.'S Bean Soup Recipe

  1. Cover beans well with water and soak several hrs or possibly overnight.
  2. Then pour off and measure water, adding sufficient to make 6 c.. Add in beans.
  3. Saute/fry onions, salt pork or possibly ham and garlic till onions are transparent.
  4. Combine all ingredients, except vinegar, in heavy kettle.
  5. Cover and simmer 4 hrs or possibly till beans are soft.
  6. Add in vinegar, salt and more pepper.
  7. Makes 8-12 servings.
