Individual Meat Loaves

  1. Preheat oven to 350 degrees.
  2. Heat olive oil in skillet.
  3. Add onions, thyme, salt & pepper.
  4. Cook over medium low heat, stirring occasionally, for 8-10 minutes until onions are translucent, not brown.
  5. Take off heat, add Worcestershire sauce, chicken broth and tomato paste.
  6. Allow to cool slightly.
  7. In a large bowl, combine ground chuck, onion mixture, bread crumbs and eggs; mix lightly with a fork.
  8. Dont mash or the meatloaf will become dense.
  9. Divide into 6 portions and shape each portion into a small loaf on a sheet pan.
  10. Spread about 1 Tablespoon of ketchup on top of each loaf.
  11. Bake 40-45 minutes until internal temp is 155-160 degrees.
  12. Serve hot.
