Individual Meat Loaves
- 1 Tablespoon Olive Oil
- 3 cups Chopped Yellow Onions
- 1 teaspoon Chopped Fresh Thyme Leaves
- 2 teaspoons Kosher Salt
- 1 teaspoon Ground Pepper
- 3 Tablespoons Worcestershire Sauce
- 13 cups Chicken Broth
- 1 Tablespoon Tomato Paste
- 2- 1/2 pounds Ground Chuck
- 1/2 cups Plain Dry Bread Crumbs
- 2 whole Eggs, Beaten
- 1/2 cups Ketchup
- Preheat oven to 350 degrees.
- Heat olive oil in skillet.
- Add onions, thyme, salt & pepper.
- Cook over medium low heat, stirring occasionally, for 8-10 minutes until onions are translucent, not brown.
- Take off heat, add Worcestershire sauce, chicken broth and tomato paste.
- Allow to cool slightly.
- In a large bowl, combine ground chuck, onion mixture, bread crumbs and eggs; mix lightly with a fork.
- Dont mash or the meatloaf will become dense.
- Divide into 6 portions and shape each portion into a small loaf on a sheet pan.
- Spread about 1 Tablespoon of ketchup on top of each loaf.
- Bake 40-45 minutes until internal temp is 155-160 degrees.
- Serve hot.
