Sufferin' Succotash
- 1 bag frozen super sweet corn
- 1 red onion
- 1/2 red bell pepper; small dice
- 1/2 yellow bell pepper; small dice
- 1/2 green bell pepper; small dice
- 1 clove garlic; minced
- 1 stick butter
- 1/3 cup apple cider vinegar
- 1 tsp cayenne pepper
- 1 large pinch sugar
- 1 pinch kosher salt
- 1 pinch cracked black pepper
- 1 EVOO; as needed
- Thaw frozen corn.
- Slowly melt 3/4 butter til browned.
- Add peppers and onions.
- Add enough oil to coat if necessary.
- Add garlic when veggies are nearly caramelized.
- Add corn and remaining butter.
- Toss.
- Add vinegar, sugar, and spices.
- Toss.
- Reduce vinegar until evaporated.
