Chicken Alfredo

  1. Cut bacon into small pieces and chicken into about 1-inch cubes.
  2. Add garlic and oil into hot skillet; cook until chicken is done.
  3. Remove from skillet.
  4. Reheat pan and add wine so that it picks up flavors from skillet.
  5. Slowly add cream, scallions, cayenne pepper, oregano and peas.
  6. Mix cornstarch with about 4 ounces water.
  7. Add a little at a time until you get a creamy sauce.
  8. Add chicken and bacon mixture; heat.
  9. Add black pepper to taste.
  10. Serve over pasta.
  11. Shrimp may be substituted for chicken.
