Zippy Turkey and Rice Casserole
- 1 cup brown rice, uncooked
- 1 lb ground turkey
- 1 onion, chopped
- 1 (14 1/2 ounce) can diced tomatoes, with mild green chilies, undrained
- 23 cup picante sauce
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 (16 ounce) can kidney beans, rinsed and drained
- 1 cup cheddar cheese, reduced fat, shredded, divided
- Cook the rice according to package directions.
- In a large nonstick skillet, cook turkey and onion until no longer pink; drain.
- Stir in the tomatoes, picante sauce, chili powder and cumin; heat through.
- Remove from heat, stir in beans, 1/2 cup cheese and cooked rice.
- Transfer to a 13x9 inch baking dish coated with cooking spray.
- Cover and bake at 350 degrees for 30 minutes.
- Uncover; sprinkle with remaining cheese.
- Bake 5 minutes or until cheese is melted.
