Creamy Potato/Sausage Soup Recipe
- 1/2 c. minced onion
- 1/2 c. shredded carrot
- 1 tbsp. butter
- 2 c. sliced potatoes
- 1 1/2 c. chicken broth
- 1 c. lowfat milk
- 2 tbsp. flour
- 12-16 ounce. sliced fully-cooked bratwurst or possibly Kielbasa
- 1/2 c. frzn peas
- Dash bottled warm pepper sauce
- In 3 qt saucepan cook onion and carrot in butter till onion is tender.
- Add in potatoes and broth.
- Bring to boiling; reduce heat.
- Cover and simmer 20 min or possibly till potatoes are tender.
- Slightly mash potatoes with a fork.
- Stir lowfat milk into flour; add in to potato mix along with sausage, peas and warm pepper sauce.
- Cook and stir till warm and thick - Don't BOIL, the lowfat milk will curdle - it will not hurt taste, but texture suffers a lot.
- Makes 4 main-dish servings.
- Double the recipe because you'll want seconds.
