Creamy Potato/Sausage Soup Recipe

  1. In 3 qt saucepan cook onion and carrot in butter till onion is tender.
  2. Add in potatoes and broth.
  3. Bring to boiling; reduce heat.
  4. Cover and simmer 20 min or possibly till potatoes are tender.
  5. Slightly mash potatoes with a fork.
  6. Stir lowfat milk into flour; add in to potato mix along with sausage, peas and warm pepper sauce.
  7. Cook and stir till warm and thick - Don't BOIL, the lowfat milk will curdle - it will not hurt taste, but texture suffers a lot.
  8. Makes 4 main-dish servings.
  9. Double the recipe because you'll want seconds.
