Smoked Tomato Bisque

  1. Bring a large pot of water to boil.
  2. Gently drop in tomatoes, let stand 5 minutes.
  3. Remove one at a time and run under cold water to break skin.
  4. Remove skin, cut into quarters and remove seed.
  5. Saute onions in margarine until soft.
  6. Add tomatoes, bay leaf, sugar, cloves, salt, pepper & basil.
  7. Simmer, stirring occasionally, about 30 minutes.
  8. Remove bay leaf, transfer mixture to blender and puree.
  9. Add cream and milk, heat through.
  10. Serve topped with buttered croutons.
