Couscous and Smoked Turkey Salad
- 1 tsp. cumin
- 1 package couscous
- 13 c. raisins
- 3 tbsp. lemon juice
- 2 tbsp. olive oil
- 1 tbsp. mustard
- 3/4 tsp. salt
- 1/4 tsp. Pepper
- 3 ripe nectarines
- 4 oz. smoked turkey breast
- Boston lettuce leaves
- In 3-quart saucepan, heat cumin over medium-high heat until fragrant, 1 to 3 minutes.
- In saucepan with cumin, prepare couscous as label directs, adding raisins but no salt or butter.
- In large bowl, with wire whisk or fork, mix lemon juice, olive oil, mustard, salt and pepper until dressing is blended.
- Toss warm couscous mixture, nectarines and smoked turkey with dressing.
- Spoon couscous into serving bowls lined with Boston lettuce leaves.
