Southwest Grilled Tomatoes
- 12 cup corn tortilla chips, lightly packed
- 12 cup pecan halves, toasted
- 8 plum tomatoes, halved lengthwise
- 13 cup diana marinade (Spicy Southwest Flavour)
- salt
- pepper
- 14 cup goat cheese, crumbled
- 14 cup green pepper, finely chopped
- 14 cup green onion, finely chopped
- Pulse the tortilla chips and pecans in a food processor until finely crumbled; transfer to a shallow dish and reserved.
- Preheat the grill to medium.
- Toss tomatoes gently with Diana Marinade, season with salt and pepper.
- Dip the cut side of each halved tomato into the crumbs.
- Place on the grate cut-side-up.
- Grill, lid closed, for 5 minutes or until tomatoes are tender.
- Transfer to a serving platter; garnish with crumbled goat cheese, green pepper and green onion.
