Thai Chicken or Shrimp Skewers
- 1/4 cup MIRACLE WHIP Dressing
- 1/4 cup creamy peanut butter
- 1/4 cup chicken broth
- 2 Tbsp. honey
- 2 Tbsp. soy sauce
- 1-1/2 tsp. garlic powder
- - boneless skinless chicken breasts, cut into bite-size pieces, or uncooked deveined peeled extra-large shrimp (16 to 20 count)
- Mix all ingredients except chicken or shrimp in large bowl until well blended.
- Add chicken or shrimp; toss to coat.
- Cover.
- Refrigerate at least 2 hours to marinate.
- If using shrimp, marinate for a maximum of 1 hour.
- Remove chicken or shrimp from marinade; discard marinade.
- Thread 2 oz.
- chicken or shrimp onto each of 24 skewers (or onto four skewers for trial recipe).
- Place in single layer in sheet pans sprayed with cooking spray.
- Broil 4 min.
- on each side or until chicken is cooked through or until shrimp turn pink.
