Thai Chicken or Shrimp Skewers

  1. Mix all ingredients except chicken or shrimp in large bowl until well blended.
  2. Add chicken or shrimp; toss to coat.
  3. Cover.
  4. Refrigerate at least 2 hours to marinate.
  5. If using shrimp, marinate for a maximum of 1 hour.
  6. Remove chicken or shrimp from marinade; discard marinade.
  7. Thread 2 oz.
  8. chicken or shrimp onto each of 24 skewers (or onto four skewers for trial recipe).
  9. Place in single layer in sheet pans sprayed with cooking spray.
  10. Broil 4 min.
  11. on each side or until chicken is cooked through or until shrimp turn pink.
