Cauliflower Crack
- 2 packages frozen cauliflower
- 2 can 15 ounces, each, tomato sauce
- 1 can Rotel diced tomatoes, undrained
- 1 red onion, diced
- 1/4 cup shredded parmesan cheese
- 1 tsp minced garlic
- 1 salt and pepper, to taste
- 2 tbsp melted butter
- 10 Ritz crackers, crushed
- Steam cauliflower 10 minutes or until tender.
- Combine melted butter and crushed crackers.
- In large bowl, mix all ingredients.
- Spread into a 9 x 13 pan that has been sprayed with Pam.
- Bake at 350 about 30 minutes, or until bubbly.
