Shrimp & Rice Casserole Recipe

  1. Cook rice in 1 1/2 c. boiling water.
  2. Spoon into 2 1/2 qt casserole.
  3. Prepare shrimp and cook.
  4. In melted butter cook pepper and onion till very tender.
  5. Mix all ingredients in casserole; bake, uncovered, for 20 min at 350 degrees.
  6. Trim with 8 reserved shrimp.
  7. Bake 10 min longer.
  8. Sprinkle with parsley.
  9. Serves 8.
