Farro, Cherry Tomato, Broccolini & Asiago Cheese Bake
- 1 Tablespoon Olive Oil
- 1 Onion, Diced
- 4 cloves Garlic, Minced
- 2- 1/2 cups Low Sodium Chicken Stock
- 1 teaspoon Each: Pepper, Garlic Powder, Oregano, Thyme, And Garlic Salt
- 1/4 teaspoons Red Pepper Flakes
- 1 Carrot, Minced
- 1 Bell Pepper, Stem And Seeds Removed Then Diced, I Used Red
- 1 cup Farro, I Used Trader Joe's Quick Cooking
- 1 cup Cherry Tomatoes, Cut In Half
- 1- 1/2 cup Asiago Cheese, Shredded
- 1/2 cups Mozzarella Cheese, Shredded
- 1 bunch Broccolini, Cut In Half Lengthwise
- Preheat oven to 425 F. Spray an 8x8 baking dish with cooking spray.
- Set aside.
- In a large skillet add oil, onions, and garlic and let the mixture bloom over medium high heat for 2 minutes.
- Add in chicken stock and bring to simmer.
- Once simmering, add in all spices, carrot, pepper, and farro, cover and simmer.
- Let it cook according to the farro package directions, until farro is tender.
- Once farro is cooked, turn heat off and add in tomatoes and 3/4 cup Asiago cheese.
- Pour farro mixture into the baking dish.
- Top with remaining 3/4 cup Asiago and mozzarella cheese.
- Top everything with broccolini slices.
- Bake, uncovered for 25 minutes, until cheese is golden brown and bubbly.
- Enjoy!
