Ham Pot Pie

  1. Melt butter; stir in flour, salt, mustard, and pepper until smooth.
  2. Slowly whisk in milk and onion; bring to a boil.
  3. Cook and stir for 2 minutes or until thickened.
  4. Stir in ham, peas, and eggs.
  5. Pour into an ungreased 8 square or 11x7 baking dish.
  6. Cut pastry to fit and place over everything; trim to fit and cut slits on the crust to vent steam while cooking.
  7. Bake at 425 degrees F for 25 minutes.
