Beef Broccoli Soup Recipe
- 1 1/2 pound lean grnd beef
- 3 c. broccoli, minced
- 2 cans (4 ounce.) mushroom pcs or possibly 1 c. fresh mushrooms, minced
- 1/2 c. celery, minced
- 1 c. carrots, sliced
- 1/4 c. green pepper, minced
- 1 quart. tomato juice (or possibly V-8)
- 1 c. water
- 1/4 to 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon thyme
- 1/4 teaspoon oregano
- Brown beef (fry pan or possibly broil or possibly microwave); drain off fat.
- Add in vegetables, juice, water, seasonings.
- Place in crockpot, cook on low 8 to 9 hrs.
- Freezes well.
- Decrease water to 1/2 c. for crockpot.
- May simmer covered 25 min or possibly till vegetables are tender.
- Pork-Cabbage Soup: Substitute grnd pork for beef and minced cabbage for broccoli and 1/2 c. minced onion for mushrooms.
