Cowboy Caviar
- 2 can Black Beans
- 2 can Blackeyed Peas
- 2 can White Corn
- 2 can Rotel Tomatos w/ Green Chilis
- 1 bunch Green Onions
- 2 tbsp Cilantro
- 16 oz Zesty Italian Dressing
- Open the cans of blackeyed peas, black beans, corn, and Rotel and drain all the fluids.
- Into a large bowl add the blackeyed peas, black beans, corn and Rotel.
- Chop the green onions and add to the bowl.
- Finely chop the cilantro and add two tablespoons to the bowl.
- Add the zesty Italian dressing.
- Chill and serve with tortilla chips.
- Scoops works best.
