Acorn Squash With Apple Couscous Stuffing

  1. Place couscous in a small mixing bowl.
  2. Set aside.
  3. Bring apple juice to a boil in a small saucepan & pour over the couscous.
  4. Cover & set aside until the juice is absorbed.This will take 15 minutes.
  5. Stir in the fruit, apple juice concentrate, cardamom & maple syrup.
  6. Set aside.
  7. Steam squash halves until tender, about 15-30 minutes (depends on the size of the squash).
  8. Drain & place on a baking sheet.
  9. Preheat oven to 350F Fill squash halves with the couscous mixture & bake for 20 minutes.
  10. Top with pecans & serve.
