Spiced Apple Muffins
- 250g block PHILADELPHIA Cream Cheese, softened
- 1/2 cup brown sugar, lightly packed
- 1 egg
- 1 1/4 cups milk
- 1 3/4 cups self-raising flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 cup canned pie apple Safeway 1 lb For $0.99 thru 02/09
- 1/4 cup brown sugar, lightly packed, extra, for sprinkling
- Lightly grease a 12 x 1/2 cup capacity muffin pan.
- Combine Philly*, brown sugar, egg and milk in a large bowl and whisk until smooth.
- Add sifted dry ingredients and apple and mix with a metal spoon to combine.
- Do not over-mix.
- The mixture should be lumpy.
- Spoon into the prepared pan and sprinkle with extra brown sugar.
- Bake at 200C for 15-20 minutes or until golden and cooked through.
- Serve warm or cold.
