Spiced Apple Muffins

  1. Lightly grease a 12 x 1/2 cup capacity muffin pan.
  2. Combine Philly*, brown sugar, egg and milk in a large bowl and whisk until smooth.
  3. Add sifted dry ingredients and apple and mix with a metal spoon to combine.
  4. Do not over-mix.
  5. The mixture should be lumpy.
  6. Spoon into the prepared pan and sprinkle with extra brown sugar.
  7. Bake at 200C for 15-20 minutes or until golden and cooked through.
  8. Serve warm or cold.
